Chocolate Chip Banana Muffins

Step 1

Preheat oven to 350 degrees F. In a mixing bowl, stir together the cooled butter, sugar, egg, and vanilla.

Step 2

Add the mashed bananas to the butter and sugar mixture.  Use a wooden spoon to stir until combined.

Step 3

Stir in the gluten free flour blend, baking soda, and salt until just combined. Be careful not to overmix the batter.

Step 4

Using a rubber spatula, fold the chocolate chips into the muffin batter.  Line or grease a 12-cup muffin pan.

Step 5

Use a large cookie scoop to transfer the batter to the prepared muffin cups. Bake for 16-18 minutes.

Step 6

Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack to finish cooling.
