Gluten free flour blend

Baking soda


Unsalted butter



Vanilla extract

Almond extract

Almond milk

Diced strawberries

Baking powder

Step 1

Preheat oven to 375 degrees F. Whisk together the gluten free flour blend, baking powder, baking soda, and salt.

Step 2

Beat together the butter and sugar until combined. Beat in the eggs and flavorings until completely combined.

Step 3

Fold in the flour mixture until just combined.

Step 4

Add the milk and fold in until combined.

Step 5

Toss the strawberries with 2 teaspoons of gluten free flour. Set aside 1/2 cup of the berries and fold the rest into the batter.

Step 6

Line a 12-cup muffin pan with liners. Spray the liners with non-stick cooking spray. Divide the batter among the muffin cups.

Step 7

Bake for 25-30 minutes, or until a wooden pick inserted in the middle of a muffin comes out clean.

Store in an airtight container for 3-4 days. The muffins can be frozen for up to 2 months.
