Step 1

Preheat the oven to 375 degrees F. In a mixing bowl, whisk together 2/3 cup sugar, oil, and eggs until combined.

Step 2

Stir the mashed bananas and vanilla into the egg mixture.

Step 3

Add the remaining muffin ingredients and stir until just combined. Be careful not to overmix the batter.

Step 4

Transfer the batter to a greased or lined standard muffin pan and bake for 18 minutes.

Step 5

While the muffins cool, melt the butter. Stir together 1/4 cup sugar and 1/2 teaspoon cinnamon in a small bowl.

Step 6

Brush the tops of the cooled muffins with butter and sprinkle the cinnamon/sugar mixture over the muffins.
