Whisk together the flour, baking soda, salt, and spices.
Beat together the butter, brown sugar, and 1/4 cup sugar until light and fluffy, then beat in the egg and vanilla.
Add the molasses and beat to combine.
Stir in the flour mixture until fully combined.
Scoop the dough onto lined baking pans, roll in sugar, and bake at 375-degrees for 10-11 minutes.
Cool the cookies on a wire rack, then serve and enjoy.
