Chocolate Chip Muffins

Unsalted butter

Granulated sugar

Salt

Baking powder

Milk

Eggs

Gluten free flour blend

Vanilla extract

Chocolate chips

Step 1

Preheat the oven to 425 degrees F. In a large mixing bowl, cream together the butter and sugar.

Step 2

Beat in the eggs until combined, then mix in the baking powder, salt, and vanilla.

Step 3

Stir in 1/2 the gluten free flour blend, then stir in the milk.

Step 4

Stir in the remaining flour. Be careful not to overmix the batter.

Step 5

Fold the chocolate chips into the batter.  Line a muffin tin with baking cups. Spray the inside of the cups with nonstick cooking spray.

Step 6

Transfer the batter to the muffin cups. Bake at 425 degrees for 7 minutes, then reduce the oven temperature to finish baking.

Step 7

Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack to finish cooling.
