Peanut Butter Oatmeal Cookies

Step 1

Preheat oven to 350 degrees F. Whisk together oats, flour, baking powder, baking soda, cinnamon, and salt.

Step 2

In a separate bowl, beat together the butter, peanut butter, and sugars until  completely combined.

Step 3

Add the egg and vanilla to the butter mixture and beat until completely combined. (Note: Use a room temperature egg for the best results.)

Step 4

With a wooden spoon, stir the dry ingredients into the butter mixture until just combined. Be careful not to over mix the dough.

Step 5

Scoop the cookie dough onto the prepared baking pans and bake at 350 degrees for 10 - 12 minutes.

Step 6

Allow the cookies to cool for 5 minutes before removing from the pan.  The cookies are delicate and need time to set up before moving.

Store leftover cookies in an airtight container.  The cookies will last for up to 3 days at room temperature or 1 week in the fridge.
