Gluten free flour blend Sugar Baking soda Salt Eggs Mashed ripe bananas Sour cream Vegetable oil Vanilla extract Grated zucchini

Step 1

Preheat oven to 350 degrees F. In a medium mixing bowl, whisk together the gluten free flour blend, sugar, baking soda and salt.

Step 2

In a large mixing bowl, slightly whisk the eggs, then whisk in the bananas, sour cream, oil, and vanilla until combined.

Step 3

Add the flour mixture to the banana mixture and stir until just combined.

Step 4

Use a rubber spatula to fold the zucchini into the batter.

Step 5

Transfer the batter to a greased 9x5-inch loaf pan.

Step 6

Bake for 50-60 minutes until a wooden pick, inserted in the middle of the bread, comes out clean.
