Quick and Easy Gluten Free Coconut Pie is packed with delicious coconut flavor!

Ingredients:
  • 3 eggs
  • 1 3/4 cups cashew milk
  • 1/4 cup butter, melted
  • 1 1/2 teaspoons vanilla
  • 1 cup shredded coconut
  • 3/4 cup sugar
  • 1/2 cup Bisquick Gluten Free mix
Directions:
  1. Preheat oven to 350 degrees.  Grease 9-inch glass pie plate with shortening.

  2. Combine all ingredients in a large mixing bowl.  Stir until well blended.

  3. Pour mixture into pie plate.  (Note: pie plate will be very full.)

  4. Bake for 45 to 50 minutes until knife inserted in the center comes out clean.

  5. Cover any leftover pie with plastic wrap and store in the fridge.
