Toasted Coconut Butterscotch Oatmeal Cookies are sweet and chewy with a hint of coconut.

Ingredients:
  • 1 1/4 cups gluten free flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 cup (2 sticks) butter or margarine softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups quick or old-fashioned oats
  • 1 cup toasted coconut
  • 1 11 oz package butterscotch flavored morsels
Directions:
  1. Preheat oven to 375 degrees.  Line baking pans with parchment paper or silicone liners.

  2. Stir together flour, baking soda, salt and cinnamon in small bowl.

  3. Beat butter, granulated sugar, brown sugar, eggs and vanilla extract in large mixing bowl until thoroughly combined.

  4. Gradually beat in flour mixture.

  5. Stir in oats, toasted coconut and morsels.

  6. Drop the dough by 2-tablespoon portions onto the prepared baking pans.

  7. Bake for 9 to 10 minutes.  Cool on baking sheets for 4 minutes.  Remove cookies to wire racks to cool completely.
