Preheat oven to 350°F. Grease and flour a 12 cup Bundt pan.
In a medium mixing bowl, whisk together gluten free flour blend, salt, baking powder, and baking soda until combined.
In a large mixing bowl, beat together the sugar, oil, eggs, and vanilla until completely combined.
Slowly beat the flour mixture into the sugar mixture until just combined.
Fold the apples into the batter, then transfer to the prepared pan.
Bake 55-60 minutes until a wooden pick inserted in the center comes out clean.
Allow cake to cool in the pan for 15 minutes. Run a knife around the sides and center tube of the pan, then invert the cake onto a wire rack to cool completely.
If desired, sprinkle with powdered sugar before serving.
Notes
Check the ingredients of your gluten free flour blend for xanthan gum. If your flour mix doesn’t contain xanthan gum, try adding 1 teaspoon to the recipe.
Chop the apples into similar sized pieces. Cutting the apples into fairly uniform pieces means they will cook evenly.
Generously grease and flour the Bundt pan. Most Bundt pans have nooks and crannies. You need to grease and flour every part to prevent any part of the cake from sticking to the pan.
