Gluten free flour blend Baking soda Baking powder Cinnamon Ground ginger Sugar Egg Vanilla extract Salt Grated zucchini Melted butter

Step 1

Preheat oven to 350 degrees F. Whisk together the gluten free flour blend, baking soda, baking powder, cinnamon and ginger.

Step 2

In a large bowl, whisk together the sugar, egg, vanilla, and salt until combined.

Step 3

Stir the zucchini and melted butter into the egg mixture until combined.

Step 4

Add the dry ingredients to the zucchini mixture and stir until combined.

Step 5

Transfer the batter to a greased 9x5-inch loaf pan. Bake for 45-50 minutes, or until a pick inserted in the middle of the loaf comes out clean

Step 6

Allow the bread to cool for 10 minutes in the pan before removing to a wire rack to cool completely.
