Vanilla Almond Granola

Step 1

Preheat oven to 300 degrees F. In a large mixing bowl, stir together the rolled oats, almonds, cinnamon and salt.

Step 2

Melt the coconut oil in the microwave, then whisk in honey, almond extract, and vanilla.

Step 3

Pour the wet ingredients over the oat mixture and stir to coat.

Step 4

Spread granola on a parchment-lined baking sheet and bake for 20 minutes. Carefully stir, then bake for an additional 20 minutes.

Step 5

Allow granola to cool completely before breaking into chunks. Store in an airtight container for up to 3 weeks.
