Cinnamon Granola

Step 1

Preheat oven to 300 degrees F. Stir together the rolled oats, cinnamon, and salt until combined. Set aside.

Step 2

Melt the coconut oil in the microwave, then whisk in honey.  Microwave for an additional 30 seconds, then whisk in the vanilla.

Step 3

Pour the honey/coconut mixture over the oat mixture and stir to coat.

Step 4

Spread the granola in a thin layer on a parchment-lined baking sheet and bake for 30 minutes.

Step 5

Allow the granola to cool completely before breaking into chunks. Store in an airtight container for up to 3 weeks.
