Ingredients

old-fashioned rolled oats
(certified gluten free)

teaspoon
salt

peanuts, chopped
⅓
cup
coconut oil
⅓
cup
honey
½
cup
creamy peanut butter
1
tablespoon
pure vanilla extract
Instructions
Preheat oven to 300° F. Line a large baking sheet with parchment paper.
In a large mixing bowl, stir together the oats, salt, and peanuts until combined.
Place coconut oil in a small microwave-safe bowl and microwave until melted. Whisk in the honey, peanut butter, and vanilla until combined.
Pour over the oat mixture and stir until the oats are coated. Transfer the granola to the prepared pan and spread into a thin, even layer.
Bake for 15 minutes then remove from oven and gently stir the granola. Return the granola to the oven and continue baking for another 15 minutes.
Cool the granola completely before breaking into chunks.
Notes
To keep this recipe gluten free, use certified gluten free rolled oats.
Replace the honey with maple syrup to make the recipe vegan.
