These Gluten Free Banana Muffins are simple to make and filled with pure banana flavor. They’re a delicious start to any day and a perfect grab-and-go snack!

Ingredients:
  • 3 large ripe bananas
  • 3/4 cup granulated sugar
  • 1 egg
  • 1/3 cup vegetable oil
  • 1 1/2 cups gluten free flour
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
Directions:
  1. Preheat oven to 350 degrees and line a muffin pan with baking cups.

  2. In a large mixing bowl, mash the bananas with a fork.

  3. Add the sugar, egg, and oil and stir together with a wooden spoon until completely combined.

  4. In a medium mixing bowl, whisk together the gluten free flour, baking soda, baking powder and salt.

  5. Add the flour mixture to the banana mixture and gently fold in the dry ingredients with a wooden spoon. Make sure the dry ingredients are completely incorporated, but be careful not to overmix the batter.

  6. Divide the batter among the prepared baking cups.

  7. Bake 22 to 24 minutes, or until the muffins are golden brown and a pick inserted in the center comes out clean.

  8. Cool the muffins in the pan on a wire rack for 5 minutes. Then remove the muffins from the pan to a wire rack to cool completely.
