Easy Gluten Free Apple Cake

This easy recipe for Gluten Free Apple Cake makes a moist and flavorful cake.  Using fresh apples in this Bundt cake makes it a great fall dessert.

The fall season is underway and I’m enjoying the abundance of fresh apples available this time of year.  If you enjoy baking with apples, you’ll want to try this recipe.

This cake is super moist and filled with tender apple pieces.  The easy preparation and tasty fruit flavor make this gluten free recipe for apple cake one your friends and family will enjoy.

Why this Recipe Works

  • The combination of tart apples and sugar adds flavor to the cake without being overly sweet.
  • Vanilla extract adds extra flavor to the cake.
  • Using a Bundt pan makes the cake easy to create.

What is the Best Apple to Use for Apple Cake?

I like the tartness of Granny Smith apples so they’re my choice for this recipe.  If you like a sweeter flavor, you can use Golden Delicious apples.

Granny Smith and Golden Delicious are good baking apples.  They both have a firm texture and hold up well under heat.

Ingredients You’ll Need:

  • Gluten free flour blend - I use Bob’s Red Mill 1 to 1 Baking Flour.  If your local store doesn’t carry Bob’s Red Mill, you can find it online at Amazon and Thrive Market.  I haven’t tried the recipe with almond or coconut flour.
  • Salt - Table salt.
  • Baking powder and baking soda - Most cake recipes tend to use one or the other, but in this case I use both.  The combination of baking soda and baking powder gives the cake batter a boost.
  • Sugar - White granulated sugar.
  • Vegetable oil - You can substitute canola oil if you prefer.
  • Eggs - Use room temperature eggs.  I take the eggs out of the refrigerator about 30 minutes before I’m going to use them.
  • Vanilla - Pure vanilla extract. 
  • Apples - I use Granny Smith apples in this cake recipe.

How to Make Gluten Free Apple Cake

  1. Whisk together the flour, salt, baking powder and baking soda.
  2. Beat together the sugar, oil, eggs and vanilla.
  3. Slowly beat the flour mixture into the sugar mixture until just combined.
  4. Fold in the apples and transfer the batter to the prepared pan.
  5. Bake for 1 hour.

Step by Step Instructions

Preheat the oven to 350°F.  Grease and flour a 12 cup Bundt pan.

Place the gluten free flour blend, salt, baking powder, and baking soda in a medium mixing bowl and whisk together until combined.

In a large mixing bowl, beat together the sugar, oil, eggs, and vanilla until completely combined.

Slowly beat the flour mixture into the sugar mixture until just combined.

Fold the apples into the cake batter, then transfer the batter to the prepared Bundt pan.

Bake for 55-60 minutes until a wooden pick inserted in the center comes out clean.

Allow the cake to cool in the pan for 15 minutes.  Run a knife around the sides and center tube of the pan, then invert the cake onto a wire rack to cool completely.

If desired, sprinkle with powdered sugar before serving.

Baker’s Tips

  • Check the ingredients of your gluten free flour blend for xanthan gum.  If your flour mix doesn’t contain xanthan gum, try adding 1 teaspoon to the recipe.
  • Chop the apples into similar sized pieces.  Cutting the apples into fairly uniform pieces means they will cook evenly.
  • Generously grease and flour the Bundt pan.  Most Bundt pans have nooks and crannies. You need to grease and flour every part to prevent any part of the cake from sticking to the pan.

Should you peel the apples?

I peel the apples before using because the apple pieces are more tender without the skin.  Apple peels can get chewy when baked.

What’s the best way to store any leftover cake?

Store the cake, in an airtight container, for up to 2 days on your kitchen counter.  If you need to store it longer, place the airtight container in the fridge for up to 5 days. 
 
Dust the cake with additional powdered sugar prior to serving.

Ingredients
  

  • 3 cups gluten free flour blend
  • 1 teaspoon salt
  • 1 teaspoon baking powder

    Is there a liquid ingredient missing? My batter does not look as liquid as this one

      All the ingredients are listed on the recipe card. The batter is fairly thick.
